Answer : Scientist Edward Asselbergs from Canada is credited with creating “Instant Mashed Potatoes” in the early 1960s while working for the food company Research Products Company. In order to make mashed potatoes, Asselbergs invented a method for partially dehydrating cooked potatoes. These potatoes could then be swiftly reconstituted with boiling water. The resulting product was advertised as “Instant Mashed Potatoes” and was an instant success, becoming a popular convenience dish around the world.
